vegan baked cheesecake with balsamic roasted black grapes and rum raisin🍇

our homemade vegan cream cheese is made by fermenting cashews with lemon juice and apple cider vinegar, creating a nutty and tangy flavour. we then roast black grapes with olive oil, balsamic vinegar and thyme for a rich, sweet grape flavour and to get rid of the sourness in the skin! we spice up our cookie crust with cinnamon and nutmeg to compliment the flavour of the grapes!
